I am often asked for tried and tested park friendly food ideas so here are my top 3 that are favourites.
A little tip for summer parties – Jelly will melt and finger sandwiches will go hard so best to avoid during the hot months.
Cheesy Pizza Pop
Prep Time: 15 Minutes
Cooking Time: 15 Minutes
Number of Serves 16
What you need:
Knife
Baking Tray
Wire Cooling Tray
Wooden Skewers
Ingredients:
2 Sheets ready rolled puff pastry
2 Cups Grated Tasty Cheese
150g Shredded Ham
How to:
Preheat oven to 200°C
Lay out the puff pastry sheets flat, sprinkle with cheese and shredded ham to cover the entire sheet
Roll onto itself creating one long log as shown in pic 1
Cut into 8 equal pieces. Place each pieces standing upwards onto a baking tray. Bake for 15-20 minutes or until the scrolls have browned
Once cooled pop a skewer into the bottom of the scroll and voila you have yourself a cheesy pizza pop
Mini Ham and Cheese Muffins
Prep Time: 15 Minutes
Time to Cook: 15 Minutes
Serves: 24 Mini Muffins
Ingredients:
1 1/4 cups self-raising flour
1 egg
1/2 cup milk
60g butter, melted, cooled slightly
75g shaved ham, chopped
1/2 cup grated tasty cheese
How to:
Preheat oven to 200°C. Line two 12 x 1 1/2-tablespoon capacity mini muffin pans with foil or paper cases (press in to fit). I prefer to use a silicon cupcake pan it saves having to use cases.
Sift flour into a bowl. Make a well in the centre. Using a fork, whisk egg and milk in a bowl. Add to flour with butter. Using a spatula or metal spoon, fold together until just combined.
Add ham and cheese. Fold through until combined. Spoon mixture into cases or straight into the pan if using a silicon mould.
Bake for 15 minutes or until a skewer inserted into centre comes out clean. Serve muffins warm or at room temperature
Tip: These are soooo yummy straight out of the oven so a perfect little snack for after school, warning though you wont be able to stop at just one!
Marshmallow Tea Cups
Ingredients:
Tic Toc Biscuits (or any round sweet biscuit)
Marshmallow
Chocolate Freckles
Musk Lifesaver Lollies
White Cooking Chocolate (any colour works)
How to:
Melt cooking chocolate on the stove until nice and runny
Lay out tic toc biscuits
Grab a marshmallow, dip the bottom into the melted cooking chocolate and place on top and in the middle of the tic toc biscuit
Using a small spoon take a little bit of melted chocolate and place in the middle of the marshmallow and then place a chocolate freckle on top
Take a musk lolly and cut in half. Take the half and dip the ends in cooking chocolate, place on the side of the marshmallow. Hold for a few seconds until it stays.
Top Tip:
If you can not find chocolate freckles you can dip the top of the marshmallow in cooking chocolate and then in hundreds and thousands. This still give the same look at using a chocolate freckle.
